Tart, tangy, and lightly floral with flavours most comparable to that of aniseed is created followed by subtle sweet, floral earthy, herbaceous tones of Yorkshire Rhubarb. Sweet Cicely is a lesser known Yorkshire herb that has a strong flavour released from the plant's roots that is very similar to that of aniseed or liquorice while the delicate leaves are sweet, light and aromatic releasing flavours similar to anise.
Best enjoyed when poured over plenty of ice & paired with either a Mediterranean tonic or lemonade to bring out the sweetness or if you prefer your Gin on the dry side - pair with an Indian or Yorkshire tonic alternatively for a fruitier beverage serve with a raspberry or rhubarb tonic!
