50ml Lemon and Thyme flavoured Gin from
The Little Red Berry Co
25ml Elderflower Cordial
Squeeze of half a lime
4 Fresh mint leaves
Soda Water
Topped with Prosecco
We recommend a regular high ball glass for this one, or a large jam jar!
Give the fresh mint a good slap on the back of your hand to help release
the flavours. Add some ice to your glass, then the mint. Pour in the flavoured
gin and elderflower cordial. Give it a good mix up. Squeeze in the lime juice.
Add soda water to 3 parts fill the glass and then top with 25ml of Prosecco.

Not sure how
our delicious liqueurs would go well with pancakes? Try this sumptuous boozy
pancake recipe.
Basic pancake recipe
100g Plain
Flour
2 large Eggs
300ml Milk
Pinch of salt
Oil to cook
Put the flour, eggs, milk and a pinch of salt into a bowl or large jug,
then whisk to a smooth batter.
Set a frying pan over a medium heat and carefully wipe it with some
oiled or using a baking brush.
Pour a ladle of batter into the pan and coat the bottom of the pan, cook
on each side (or give it a flip if you are feeling adventurous!) for 2 minutes
or until golden.
In addition to this chop some fresh
strawberries and leave to one side.
Mix 3 tablespoons of caster sugar
and 2 table spoon of hot water into
a small pan and simmer until it turns to a thick sugar syrup.
Add 12ml of Strawberry Vodka
Liqueur and simmer for 1 minute
To serve
Add the chopped strawberries on to the cooked pancake and fold.
Drizzle over the boozy Strawberry Vodka syrup!
